In engineering, you can go for computer Science or IT engineering. You can also go for marine engineering but its quite an extension. You can even go for civil engineering because it has a good scope, even you can establish your own company as a builder. Apart from the usual engineering branches, you can choose some different types of engineering branches like food technology and petrochemical engineering as they are underdogs in the field of engineering.

Nobody will employ you as a manager immediately. If you do it through a very reputed institute, first you will be hired as a management trainee and you will work in various departments such as guest relationship, front desk, F & B, room services, customer support and credit and after successful performance, you may be kept in a specific department as assistant manager level. You will progress in various positions. Even a 2 star or 3 star hotel won't appoint anybody directly as a manager. Yes, if it is restaurant or eateries, food chain, you may be appointed as a store manager.

For a risk analyst role, an MBA/PGDM from a top college is necessary. There are global banks who come for such roles and also give good pay.
And, your Bachelors degree of electrical engineering won't matter in getting that coveted role.

I would suggest you to either do a Diploma soon after 10th or consider completing 10+2 and then a Bachelor's degree in hotel and hospitality management. In the mean time, since your interest is very clear, you could consider taking up short courses and hands-on experience in baking. Prepare well for the entrance exams, interview and group discussion if you are planning the Bachelors in hotel management.
