Let me advise you at this instant that getting admission in an institution abroad is not dependent on academic excellence alone. They invariably look at the student from 360 degrees perspective. There are many aspects that these institutes look into and then give admission. In view of this I would strongly recommend that you should contact and agency that is sending students abroad for studies after graduation in engineering. They would normally be aware of different aspects that should be in the CV of a student and will help you accordingly. Best wishes to you.

GATE cutoff depends upon the opted specialization and category you belong to. However, a GATE score above 700 can be good enough for top IITs.

Earlier there used to be allegations of nepotism and fraud in the process of conducting written exams. To avoid all this and to have a level playing field, these days PSU's use GATE examination results instead of conducting their own examination. Due to this which paper you have selected for giving GATE is actually not important. What is important is the ranking of the marks that you obtained in this examination and of course you are basic engineering graduation which is being sought by the concerned PSU. Best wishes to you.

GATE examination is a Computer Based Test (CBT). So GATE is basically a national examination on the comprehensive understanding of the candidates in various undergraduate subjects in Engineering / Technology / Architecture and post-graduate level subjects in Arts, Commerce and Science. GATE 2021 will be conducted for 27 Subjects (also referred to as papers). Qualifying in GATE is a mandatory requirement for seeking admission and/or financial assistance to Postgraduate Programs (Master's and Doctoral) with Ministry of Education (MoE) and other Government Scholarships / Assistant ships, subject to the admission criteria of the admitting institute. The GATE score is also used by some Public Sector Undertakings (PSUs) for their recruitment and by several other universities in India and abroad for admissions. GATE 2021 score will remain valid for THREE YEARS from the date of announcement of results. So the preparation strategy of GATE is depended upon the educational background you belong to. However, 6-8 months are very good enough for GATE preparation. You can also take help from the private GATE study centers as well as from the online live courses like from MADE EASY, GATE FORUM and ACE Engineering Academy, etc.
