In my opinion, you should drop a year to get a deep knowledge of your subject, so that you can easily get a top NIT or IIT. Also, after that, you need not worry about your college if you don't get a top NIT because you would have a satisfaction that you know.

There are many colleges which give admission to their M.Tech on the basis of merit that is percentage of B.Tech or UG programme. You can check it on NET. You can even join Galgotia Univeristiy. It offers on basis of merit. It depends on you that you want to continue your studies or choose for better job. You have to select the option in between the two. Best of luck.

Material technology is not very good at NITS. In NITS there is not very pressure of work so you will get time for preparation.

There are a number of books which you can follow for the GATE, just read thoroughly each chapter whichever book you follow. I am suggesting you some books:-
for production: - Production operations by Allen Robert (vol-1 & vol-2),
for Drilling - Well engineering and construction by H. Rabia,
for Reservoir - fundamentals of reservoir engineering by L.P Dake & book by Tariq Ahmed and for
Logging - Log interpretation principles and operations- Schlumberger.

It is all up to you how much you are dedicated towards your goals, and how much you are serious towards your preparation and if you have a clear vision and target towards UPSC exams and you are unable to give time to your studies and if your parents are financial strong, then you can quit the job and first focus for Exams to fulfill your dreams. Since you have lost one year, it would be better for you to pick up a job and after gaining 3 years of experience explore Executive MBA or Distance MBA or Part time MBA. You can also explore full time MBA after a couple of years and then take advantage of your pre MBA work experience during the campus placement process.

You can't take coaching of only 2 subjects.
This is possible for distance only.
But you will have to buy the whole package.
