Mathematics: IIT mathematics by Das Gupta and TMH Publication along with MTG Publication of past years papers.
Chemistry: Prakash Bahadur for numerical chemistry.
Arihant Publication for inorganic.
Jagdamba Singh for organic chemistry.
Physics: book by IE Irodov. Advance has direct questions from this book.

If you are very serious about your career, I would suggest you to have a backup plan first of all. Because acting is not a sure-shot career. UPSC again is the most difficult exam to crack. Thousands of students apply for the exam and few lucky ones are able to crack. If you are good at time management, you can juggle through both; acting and UPSC. But personally, I would highly recommend you to devote your time in one of these, especially if you're eyeing for UPSC. And do have a concrete back up plan to fall upon.
As you have score low in the NEET 2018. You cannot get government colleges. You should take a drop only if you are confident to crack it in next year otherwise you should not waste your one precious year. You can also try for some best courses rather than going in MBBS.
For CAT, I would suggest you to join a good coaching institute and also give various sets of mock tests. This would help you to know where you even stand at the end of the day. Exam is quite tough. But, if you keep giving mocks and know your strengths, you can crack it. If you don't want to join a coaching class, get the books required, start practicing and buy various mock tests online and keep practicing. Books recommended: Time class books or either IMS class books.
If you are passionate enough to get inside a reputed campus for under graduation it’s important to clear JEE. You can select a good coaching center and go for 1 year coaching. You can easily crack the exam. Dedication and speed for answering matters a lot in this exam.
