No doubt Gautam Buddha University is a good university. Basically, placement depends upon the qualities and the overall performance throughout your education. But some of the top ranking colleges have good placement.

GATE score is used by majority of PSUs for recruitment of graduate engineer / management trainees. Some of the PSUs career opportunities and salaries are similar to private sector. Therefore, you are required to score high in GATE to seek job in PSUs.

Keeping the last year of trends in consideration, the chances of getting CSE are very low. However the chances of getting Civil, Chemical and Mechanical are high.

Talking about COEP, MIT, Bhartiya Vidyapeeth, Symbiosis, PICT and IIIT, you won't get any barnch in any of these colleges. Now the colleges in which you can get admission in CSE are:
DY Patil, PCCOE, Sinhgad Institute, MIT Academy of engineering. , MESCOE, GH Raisoni and many more. You may get admission in Bhartiya Vidyapeeth and Symbiosis by going through an agent (but I highly recommend not to). The colleges in bold are good college and you can easily get CS in them. Mechanical engineering is the best branch of this college and also a student of mechanical engineering. Other branch like electical, ECE, CSE etc. available in this college.

Both are average. You can give preference to NIIT. NIIT Neemrana is quite a reputed name to bank upon for CSE. VIT-Vellore, Amrita University, SRM, Manipal University.
Also, considering about fee, distance from your area, and according to your son's interest, choose the best according to his comfortability.

Bioinformatics is becoming very popular nowadays and active research is being undertaken by many institutes. I would suggest that you sit down and do some research on Bioinformatics and information security. See which field suits you better.
Since it is an emerging field and a lot of people don't know about it, there is vacancy in bioinformatics. So, if you want to pursue higher education, complete your doctorate and become a researcher,then go for bioinformatics but if you want to get a job after college then go for information security.
