Vellore Institute of Technology and Manipal Institute of Technology both of them are the best private engineering colleges of India.
According to me, computer science engineering from Vellore Institute of Technology is much better than aeronautical engineering from Manipal Institute of Technology because of the following reasons

I will suggest you to opt for UPES , as in UPES, there are qualified faculty, good infrastructure and awesome placements. In short, UPES is the worth of money.

All are good, in mechanical and civil job is less but CSE is having more opportunities and a good scope for placements. If you're quick learner, then you can easily get a high package job. Rest EEE and ECE is also good if you get placed in the core branch.

Placements are quite good for Mechatronics and other Branches. Some of the Faculty members are good and having proper knowledge with proper qualifications, other facilities are good enough.

Yes, you can easily take admission in CGC, Landran for CSE.

I cannot comment about the other courses that you have mentioned but I can give my inputs on EEE NITK (Surathkal).
The department has experienced professors in core electrical domain. But for the electronics part in the title of 'Electrical and Electronics', justice is not met. There are not many courses for electronics apart from Analog and Digital Electronics. DSA (Data Structures and Algorithms) is not offered by EEE department. Other courses are Signal Processing and Digital System Design, etc.

I can tell you about SRM University. It has 100% placement in CSE department. Many big firms recruit students from SRM University like Cisco, Amazon and E&Y.

From my honest opinion, such scores might not fetch a great IIT or NIT with such scores. But I would suggest you to not lose hope and look for other ways out. I had almost similar situation, so I can completely understand your concern. Afterall IIT is not the final destination. I would suggest you to look forward with other entrance exams such as LPU NEST. However, as per your rank, your chances are slim for getting this college.

Placements have always been good. A big bunch of both MNCs and startups come for recruitment throughout the year. Although mainly the companies are IT firms, favouring IT and CSE candidates but other branch students too are allowed to apply for those jobs. Package values ranged from 2 lakhs per annum to 30 lakh per annum with many companies paying around 10-15 lpa. Companies like Microsoft, Cisco, Oracle, DeShaw, PayPal, Erricson, Morgan Stanley, Direct, Blackrock are among regular recruiters in VIT. So placements in VIT are good for both CSE and IT branch.

Well, it is a tough question to answer. But for CSE I will suggest Vellore over DTU.
DTU admits over 300 students in CSE branch every year. Competition for the job is quite tough.

Try to choose the field of your interest.

Both the universities are best in their own way. It depends on the parameter that one considers for differentiating them. Location wise: Jamia Milia Islamia is better, because of the availability of resources for better education like internship offers, coaching centres for other entrance examinations etc. Exposure is more. Course fee: Nominal fee in both the cases. Lower in case of AMU. Hostel wise: AMU provides accommodation to almost all students while Jamia Milia Islamia has lesser seats in hostels.
