You should go for entrance exam conducted by NCHMCT to get into top government colleges of hotel management in India.
Some private colleges offer direct admission also.

Formal path for becoming a scientist needs a Masters followed by a Ph.D. degree. After your Bachelors , try to join a research based Masters in good universities like IIT, IISc, Hyderabad Central University, TIFR, etc. These universities also offer a joint M.Sc/Ph.D programmes so that you can save one year time.
