Your parents are correct you need to take a degree course before appearing for any of the government exam like Combined Defense Services or for research exams like CSIR NET for Junior Research Fellowship (JRF) .
You can pursue engineering degree in the the field of your interest as it will help you in both of the fields, defense and research field.
For the CDS exam you need to have
i) For Indian Military Academy/Officers Training Academy: Degree from a recognized university or equivalent
ii) For Indian Naval Academy: Bachelor of Engineering
iii) For Air Force Academy: Degree of a recognized University with Physics and Mathematics at 10+2 level or Bachelor of Engineering.
For the CSIR NET Exam for Junior Research Fellowship (JRF) the Qualification Eligibility are:
M.Sc.
Integrated BS-MS
BS-4 Years
BE/B-Tech
B-Pharma
MBBS
Or an Equivalent Degree.

HVAC market in India is huge but an important and a part of the project. BSL, Voltas, Carrier, York, Daikin, Samsung, LG, Suvidha, etc., are important players. BSL, Voltas, Suvidha indulge in large value projects as well in addition to supply of their own products. BSL and Voltas are involved in design and build projects in MEP domain in India. All other players get the projects executed through dealers.
Don't leap into any field because it fascinates you. Every professional domain has a toilet which is not clean. What you want to do in HVAC is therefore more important. Do you want to be a design specialist or planner or a project coordinator/ director or in marketing and sales or channel partner manager, etc or a service specialist? If you would like to know what any domain is really about, I suggest you to opt to begin with after-sales-service domain because, you will be required to dirty your hands and only then you can connect what you have learnt in books hitherto with the reality. This way you will learn:
(a) to be a better sales person - because you will know what not to sell and how to put your foot down to unfeasible expectation an architect / customer may have
(b) to be a better design engineer because you can foresee what the users will face in future and incorporate the same in your design.
(c) to be a better projects person: You will not want the serviceman to suffer when the project is handed over and hence, will fight for essentials for a good project with stake-holders
(d) a better manager of channel partners: channel partners need nurturing, strong company policy for giving them justice and importantly require very close hand-holding especially when you are grooming them, because they are your extended arms. You will know how to respond to them when you know the potential issues before-hand. With sound technical knowledge you can deal with top consultants.
I dont think there is a particular course for HVAC except there was a post Diploma course for specialisation R&AC by a TN institute called Kothari, which is very good but it is for Diploma Holders (I don't know if graduates can apply too).
