Hotel management is running a hotel and hospitality is the term used for an industry based on hospitality(dealing with people) - Hotel, restaurant, pub, night clubs, travel agents etc.So hotel management is part of the hospitality industry.
Hospitality is an integral part of hotel industry. Hospitality has also been a part of services industry. More or less hospitality is associated with each and every industry.

Do your 11th-12th from Science and then do the graduation in Hotel Management.
You can also do your HSC from any stream but take Science so as if you change your mind in two years you would be able to get in Anything.

Mechanical Engg is a technical course while HM is a management course. A degree can not be compared with a ITI diploma. Obviously a HM degree will give you an edge over ITI.

I would recommend NCHM+IGNOU Collaboration to offer Hotel Mgmnt Degree program through IHM institutes at all state capital locations, these are govt institutes and with good track record in terms of overall performance & placements . you may visit the specific institute website and NCHM website for more information. Other than this Welcome Hotel Group HM Institute is also very good and then other institutes like Christ University HM course.
All d best in your selection.
