Yes, JAM is an entrance exam specifically for M.Sc Courses IIT's. It is mandatory only if you want to pursue an M.Sc at one of the IIT's. Other colleges have their own eligibility criteria. Logically yes, if at all you want try with IITs and NITs, BITS, PSG type of institutions. But professionally, if you want to go for worthwhile career ME/M.Tech/MS by research are better than M.Sc. Make your choice to your hearts content.

Yes, you are eligible for the CSIR NET exam. Eligibility Criteria for CSIR NET:
BS-4 Years, M.Sc. BE/B.Tech, Integrated BSMS B.Pharma MBBS or an Equivalent Degree. For General and OBC candidates, 55 percent marks are needed, and for SC, ST, and PWD candidates, a minimum of 50 percent marks are needed. A Student must be an Indian citizen. Age: For JRF, the students must be not more than 28 years as of July 1, 2022. Relaxation in age limit for CSIR NET:
For SC, ST, PWD, and Female: 5 years
For OBC: 3 years. There is no upper age limit for Assistant Professorship or Lectureship. I hope this will help you.

Scope wise , in my opinion Biotechnology is a flourishing subject but I cannot guarantee how much popularity it will find for itself in India. But surely all the subjects you have mentioned do have scope somewhere or the other. Choose something you'd love to study, and then find for jobs you'll enjoy.

It's great connecting with you. You can definitely apply for the UGC NET if you have completed the Masters's programme with at least 55% marks. The candidate from the reserved CAT must have at least 50% marks. There is no age limit for the lectureship, but to apply for the JRF Fellowship, the age limit is 30 years.
