There are certain rules and policies under which any university private/deemed/central has to function. If they violate any rule, the course is de-recognised. There's an option to do MBA with IT. You may look for it. MCA will keep you closer to your work. Go for it if you enjoy your work. MBA will open many channels for you and divert you from what you are doing. I will also suggest that complete 3 years before you switch to college education again

Hi, Every state board has equal value as per Indian education council. So it's basically dosent matter if you do your 12th from Gujarat board, Maharashtra board or any other you will be eligible to apply for Engeenering or MBBS entrance examination with equal rights.
