All the names that you have mentioned are in top most category. Your aim is definitely good. I feel that for admission in any one of these you should aim for 80 percentile and above.

Difficulty level of the paper: Every year the histogram of marks scored by all the candidates appearing the test will have some variation. Expect the average to be as less as possible for the cut-off to go down.
Timeline of admission process for NITs and IITs: As generally most of the students getting an admission to NITs and IITs will score pretty well in CET, they are always there to grab a seat in VJTI/COEP if the admission to NITs/IITs start after this process. But these students will later surrender their seat. So expect the cut-off to drop after the first round.
However, I suggest you not to score based on the cut-off. Try scoring as high as possible and then hope to get a seat you desire.

However, since MH CET is going to be conducted this year, JEE Mains has no relevance.

Unfortunately, VJTI admission is not on the basis of AIR in JEE Mains. But, it is based on the entrance exam conducted by Government of Maharashtra.
