You need to be +2 with PCB/PCM. B.Sc Agriculture is a four year degree course after which you would be eligible for Vacancy with Government of India. And companies dealing in Food and Argo Product. There is a very good scope for this degree in current scenario. There are colleges like Lovely professional University, BHU etc. who have a very good course structure and Placement opportunities for Agriculture students.

Maybe you can, But you should proceed valid reason for the gap. Most the Colleges give admission for the candidate who having below 24 years.
But still your gab is 4 years and to rejoin the same course I think after 2 year gap you are eligible to rejoin still just confirm from the faculty else repeat it.

Career oriented ofcourse,

Scope wise , in my opinion Biotechnology is a flourishing subject but I cannot guarantee how much popularity it will find for itself in India. But surely all the subjects you have mentioned do have scope somewhere or the other. Choose something you'd love to study, and then find for jobs you'll enjoy.

You can start with last few years paper for entrance and then based on your performance, prepare for the exams. There are many books available in the market like R.Gupta's to practice the different sections.

First of all, BITS Pilani don't wants admission according to category basis they take admission purely on merit. Second thing is, it doesn't matter how much you scored in total they wants 75% aggregate in PCM to get admission in BITS any campus.
