Yes your degree will be accepted from DU even if you are doing evening college. It doesn't make a difference if you do it from morning or evening college.
As you want to do your masters from UK, then it's recommended to do it with Honors even if you are doing through correspondence as it becomes easy to get accepted otherwise you require 15 years education to apply for MBA and that should not overlap.
They might also require 2-3 years experience if you apply for MBA else there are some colleges who also hire students with no experience.
You might have to check while filling your application.

Well, it would depend on the institute, as different institutes have different criteria.
As you have already done a diploma, you are eligible for seeking lateral entry in B.Tech. One requires to qualify LEET as conducted by the technical education board of the state. Lateral Entry Entrance Tests are conducted on state level. But some colleges and Univerities too conduct Lateral Entry Tests. You will get direct admission to 2nd year of B.Tech if you clear the exam.
