After class 10th if you want to pursue, you'll have to do a Diploma course, and then take degree. The best way to get a degree is to pass your class 12th with Science. Give JEE and be eligible to get admission into B.Tech.

For Diploma in Hotel Management, your 12th pass certificate is mandatory, however, you have completed your 10th in 2013 so can apply from various open boards and complete 12th. On the other hand, IAS is most difficult but if you are interested in extensive study and are a seeker of knowledge, you may go for this.
So all of the courses totally depend on your field of interest.
Your percentage is good, so you can be admitted in a reliable course which you want to do.
