But, since you are an engineering student which means you already had a degree, so I suggest you to take admission in the specialization course which will help you in getting better job opportunities in comparison to MHM course. If you want to become a chef you should do BHM but B.Sc. Will keep your options open if you want to change or pursue some other course in future.

No, but for 3 years you need to study for all 4 departments, and in last year you can choose your specializations or Department of interest.

You can not apply for Diploma in Hotel Management course after completing 10th ! You can apply for Diploma in Hotel Management course after completing class 12th.

I would suggest getting at least 1 year experience in India. You might be able to find bakery jobs abroad for fresher. But, these often pay very less or are not a popular establishment.

If you have finished your graduation, then you can choose Diploma course in hotel management or if you are willing to give more time duration to your studies. Then, you can go for degree course in hotel management, as it would be equal time limit taken equal to B.Com. So, it is up to you if you are willing to give time then do degree course in hotel management otherwise Diploma is best option for you.

You haven't mentioned the exact entrance exam. For NCHMCT JEE the upper age limit for General and OBC is 25 years.

If you want to become a chef then you should take admission in 1 year specialization courses.
1 Year Certification course in food production will help you learn and train you about the preparation of various cuisines like Bakery, Continental, European etc. The course is specialization course and is approved from Tourism and Hospitality Skill Council. The Hotel School offers this course to you in its 3 campuses which are in Delhi, Haldwani and Pithoragarh.
