If you are a sous chef, I believe that you have already got skills and asking this question suggests that you are not confident about your skills.
Well, If you were a fresher without any skill I would have suggested that you can't do it but since you are already a chef with 7-years of experience, you can enhance your skills by watching videos online and practicing those recipes at home. You can also purchase books and read them. See, culinary is an art that you will learn only by practice.

Yes, hotel management has a good scope. Hotel management can include Hotel & Restaurant management, Cruise Ship Hotel management, Hospital Administration and Catering, Hotel and Tourism Associations, Airline Catering and Cabin Services, Club management, Forest Lodges, Guest Houses among others. Expansion of global travel industry and aviation industry is expected to boost hotel industry in next couple of years.

The eligibility depends on the type of course that you wish to pursue, the details of some courses is stated below:
Diploma Class 10th pass from a recognised board with minimum 40% marks.

Bachelors Degree: Class 10+2 examination with at least 50% marks.
Post-graduation degree: Bachelors degree from a recognised university with at least 45% marks.
Graduate & PG programs may also require you to appear in entrance exams such as NCHMCT, AIMA UGAT, E-CHAT etc.

You would need to clear your class 12th with at least 60%, then apply for NCHMCT. IHM - Delhi is one of the top IHMs, which fills up in the top 200 rank, hence you need to strive for this rank, else you would opt for the other IHMs as per the rank or other colleges that allow admission on basis of NCHMCT.
