The only difference is level of practise and dedication. IITians are the top in this aspect which can be easily noticed about their craze. So comes the NITians and general colleges.
It doesn't matter much because it is how you make use of the knowledge that matters in the latter half of your life. So, whatever college you are in work hard and enjoy life.

No all those who have appeared for JEE Advanced will be not be given a seat as there will be more than 50,000 students while the number of seats will be around 5000-6000 only.
Your all India rank should be below 2000 to get a seat at a good IIT.
The admission into NITs is based on the ranks in JEE main and not JEE Advanced.
So if you have a good rank in JEE Mains like 10000, you can get admission in NITs.

I think your eyesight is not going to be an issue as NITs don't have separate eligibility criteria for that. You need to have a good score in JEE Mains with 75% in boards.
However, you need to have a good eyesight if you opt for courses like mining, petroleum, geology, machinery, etc.

Candidates are expected to have 40% or more marks to qualify in the NATA exam. They have to obtain at least 80 marks out of 200.
There are many NITs where you can get admission into with 4034 AIR. Please check online for the cut-offs of NITs.
