Hi,
Yes, for sure you can go with B.Sc Physics (hons), while you have PCB stream. There is no compulsion that people with Maths can only pursue Physics Hons.

If you have cleared all the subjects of class 12th you have the relevant documents (Mark-sheet and passing certificate which are required in the admission process in any university), then there shouldn't be any problem.

You must explore options, visit College and university websites, check the programme offered, curriculum, career outcomes and thereafter decide what is best for you. Every student is different and what seems best for a Science student in general may not be viable for you. So, decide for yourself. Also, Diploma programs in general studies are difficult to find in Canada, you will find mostly technical and engineering programs. There are popular colleges for Diploma programs which you can explore like Humber College, Niagra College, Red River College, Lambton College, Algonquin College, George Brown College and many more

Yes, you can pursue PG in Sociology softer completing graduation in Physics. Because to apply for PG, you just need to qualify the graduation. As you ask, are you eligible for UGC NET so you can appear for the UGC NET exam in your qualifying year of post graduation or after qualify it. You have to be score at least 55% aggregate marks in Masters to be eligible for the NET exam.
