You can choose any subject you like, subjects you have studied in 12th are only used to calculate your percentage, rest is your choice. You can choose any subject you want to do.

Your percentage is very low for du, and unless you are SC/ST candidate you can not get admission in DU.

Yes, you can get admission in B.Sc. chemistry in AMU with PCB. No maths is required. You'll have botany and zoology as your subsidiary subjects.

2.5% is usually deducted on the inclusion of the additional subject. this can differ from college to college and you should check the brochure to know about the method of calculation of percentage

As far as I know, there aren't many colleges in DU that are not good, if it is the studies that you are concerned about. I'll presume that you are referring to the North Campus colleges and Sri Venkateswara from the South Campus.
You need to score at least 93% to even stand a chance. And that's probably still a very low score that I am quoting. Cutoffs generally go up. Still, if you get a score around 93%, you'll probably make it to institutes that are still good yet not as reputed as SVC, KMC, etc. (like DCAC, DSC, SBSC, etc.)

The cut off list goes to 90%. So I think it's difficult with 80%
