Spot round counselling means allotment of vacant seats of courses among the eligible students on first come and first serve basis. Spot rounds can be conducted till the seats get filled.

If you want to become a pilot you may opt for science stream in 10+2 stage with physics, chemistry and maths as core subjects. After 12th you can appear for NDA exam conducted by UPSC twice a year to become Pilot in Indian Air Force. Since you are getting 154, you may get any lower NITs or IIITs, but if you want to appear in JEE 2018, you definitely can. Dropping a year doesn't seem to be problematic more or less, every one does. But, if you got any good college option this year, then take admission and continue with that, you may also attempt JEE continuing with your 1st year studies.

The selection of course doesn't matter, but your interest in that field matters. Go for a course which interests you the most. If you will excel in your field then salary would be no issue.
