Kindly check CBSE's main website because there may be few changes. As per my knowledge, if you have 6 subjects then best 5 will be considered for calculating your percentage.

Why insistence on engineering? I would advise you to move away from this field. Why not try Humanities or commerce? There are plenty of opportunities in both these fields.

Yes, you can apply for hotel management program with your CBSE Patrachar or NIOS board mark sheet. Hospitality sector is always on high demand in respect of chef, client service, bar manager, guest relation, etc. You can pursue MBA after completing hotel management degree to reach management level position and to get a good salary too.
