IHM is part of the government body while IIHM is a private institution.Generally, there are not much difference as it all depends on you and the efforts that you would be willing to put into your education and learning. IIHM being a private institution will get you more coverage.
If you have a low budget then go for IHM. Placements are good in both are good in both the colleges.

You need to apply for NCHM and all other top hotel management entrance exam and university because through that you would have other options if you are not able to clear or get the best college under IHM.

All government run hotel management colleges (IHMs) take admission through a common JEE which is conducted by NCHMCT. It does not matter whether you are academically brilliant or average. You have to qualify that entrance to get into government hotel management colleges across India.

You actually don't need a special book has it is completely based on General Knowledge or Current Affairs, Little science and maths. But one such books which helps you to crack the exams is "Arihant Study Package for Hotel Management and Hospitality Administration".

Hotel management can include Hotel & Restaurant management, Cruise Ship Hotel management, Hospital Administration and Catering, Hotel and Tourism Associations, Airline Catering and Cabin Services, Club management, Forest Lodges, Guest Houses among others.
