After completing your class 12 you, have to acquire yours Bachelors degree in any B.Com with minimum of 50%, then you have to write any of the entrance exams for MBA like CAT, MAT, XAT, CMAT, TISS or any other state level entrance exams. According to your percentile in the entrance exams you should select your colleges.
You should prepare well to get the best colleges. You have a very long time to prepare, so prepare your utmost to get the best results.

National Council of Hotel Management and Catering Technology (NCHMCT) conducts a joint entrance examination (JEE) each year to offer admissions to aspirants in hospitality and hotel administration programs.
NCHMCT is an autonomous body under the Ministry of Tourism, Government of India. NCHMCT was established in 1982.
By clearing NCHMCT JEE 2017, candidates can secure admissions in 21 central institutes of hotel management, 19 state government institutes of hotel management, one public sector undertaking and 13 private institutes of hotel management affiliated with NCHMCT.
Apart from this, a total of nine food craft institutes offer Diplo

Petroleum engineering is a professional degree, where as hotel management is not. If you don't want to worry about studying then choose hotel management. Hotel management is mostly practical based. You can just enjoy doing it. In the present scenario where crude prices are low and many have lost their jobs because of this, its better stay out of it. One more thing, its really unethical to compare these two courses as they are like two different poles. First, be clear whether to do engineering or normal degree. You can also consider courses like marine, harbour, nautical science etc.

5 years course after class 10th directly is not much benefited. As even after investing 5 years, you will be just get a Diploma. The better option is to go for class 12th, then opt for a degree course. This way you spend the same 5 years, but you will have better qualification and better jobs.

Yes, IIHM takes open board students as long as you clear there entrance exam.

The admission of IHM's are based on the rank in NCHMCT exams then the 12th percentage. 60% is the minimum eligibility to appear for NCHMCT.
