Hello Abhishek,
All these three universities are the top colleges for CSE. But in terms of rankings, VIT University tops the list. While SRM University ranks second and Manipal Institute of Technology is at the third.
So my preference order would be :
1) VIT University, Vellore
2) SRM University main campus
3) Manipal Institute of Technology, Manipal.

SMU distance education is recognised in India but for foreign countries please contact the University directly, they might require additional evaluation of your degree.

Are these universities allowed to run distance MBA courses? Check UGC's website first and then only take a decision. My suggestion is that you should go for IGNOU.

College change or university change after first year is completely dependent on college and university norms, some university allow it and some won't plus you need to have good scores in first year to apply for the same. For further details contact the college authorities.
