Yes, for AME minimum age is 18 years. You can pursue the course.
You should although check with the university about the required educational background to do this course.
You will also have to be careful about the job. Because most airlines have age limits mentioned while hiring freshers for AME position.
Air India although allows category wise relaxation in age for freshers also.

Stammering is controllable and within limits should not affect the candidate's selection for pursual of CPL Training. Although I would still suggest to meet a panel doctor who is certified by DGCA for conducting class 1 initial and renewal medicals. They will be able to give exact advise. The list of all such doctors is available on DGCA webpage under Medical Tab.

Cabin Crew Training Course allows you to get groomed and ready for the interviews which various hiring airlines conduct from time to time. Usually all such Academies groom candidates in order to become presentable in the interview. Both Avalon and PTC are comparable academies, because None provides placements. No such academy provides placements for that matter. They only groom you and help you in getting notified about vacancy announcements.

You can definitely become even after aircraft maintenance course but for that you will have to do CPL training also.
Aircraft Maintenance will make you an aircraft technician and not a pilot.
To be a pilot you will have to do CPL Training.
You should although have passed class 12 with PCM 50% marks to go for CPL Training.
The aviation maintenance course will hold no good there. It will only add to your additional qualification and will find a place in your Resume.
