Yes, you can very well do UI design. There are few design principles to understand UI design. The better would be to do a course/degree in UI design. If you have explored enough and decided to make your career in UI design which is in boom right now, you can do MDes(from NID/ IDC, IITB) in User Interfere Design/Interaction Design. You have background of IT and good 2 years of professional experience. Go for it.
Remember, one can opt for any career you want irrespective of what you have done in past, time taken in the process may vary, but one can do it! And here, you have a good supporting background that's added advantage for you.

Hey, if you are interested in making career in animation and VFX course then you should directly go for animation and VFX degree course and if you are only having hobby interest in then you should go for certified course. As by doing degree course you can also do Masters in it and if you want to know more about these courses then you should make survey of places in Ahemdabad as it is one of the leading cities of India providing training in these courses and there are many institutions, colleges, academy and training centre.

Arun, if you are weak in Maths you can go for B.Sc Forensic Science, B.Sc Food technology, B.Sc MLT and so on.
If you have any passion for computers you can go for BCA or B.Sc Computer Science or B.Sc IT.
If you want to learn the tricks of management or want to start your own business, BBA, B.Com (Professional) can be good choices.
If food and its aroma arouse you, hotel management can be your calling. Or on this line only, you can join a course in tourism and hospitality that is going to take you places.

Aman, there are many good private universities offering various courses in Agriculture. They are also having required approvals and recognitions required.
Most of them have good placements and some even offer scholarships.
