The difference is simple. Electronics Engineering is a field where you learn about designing, creating, and testing electronic devices and circuit systems.
Whereas Electronics & Communication Engineering is a part of Electronics Engineering, focused on communication systems combined with electronics. For example, satellite, Wi-Fi, etc.

I feel both fields are good, but ECE is a slightly more versatile option than traditional Electronics Engineering. For example, ECE is a blend of both hardware and software knowledge, including semiconductors, circuit systems with VLSI, embedded systems, and telecommunications.
The EE is more focused on designing, developing, and implementing electronic circuits and devices.
