I shall suggest that Civil Services Examination of any state or the Central Civil Serviced exams taken by UPSC demand expertise of the highest level. Taking a course in Graduation shall do great help or may hurt your preparation. I shall suggest that, because of the general awareness subject's importance, B.Sc Hind may give less burden. Take a stream which gives more time for preparation.

It doesn't matter much what course you picked. IAF takes all forms of engineering students for various tasks. So, the best branch to choose would be the one you are interested in. You will be much better off with the branch you can easily study. Other than that, Aviation Engineering will be more appropriate given your query for obvious reasons. So choose what you think will be best for you.
