Eligibility for B.Sc in Hospitality Studies is as below. Candidates wishing to apply for the course need to have passed their Higher Secondary Certificate with a minimum of 50% marks in any stream, from a recognized board. After application, some colleges/institutes may hold an entrance test followed by an interview to judge the eligibility of the candidate for the course.

The validity of NCHMCT's result remains for one year only, and the admission process for year-2018 has been closed in July-2018. Hence, you have to appear again in year-2019. Further, you can get selected in IHM-Bangalore, if participated in counselling round, because the opening and closing ranks in your category were 1012 and 11366 respectively.

There is no one book for the course as its syllabus is quite diverse. Once you join the Bachelors, your faculty will help you out with that.

It depends on the institute actually. Basic eligibility although is 10+2, but there might be some age bar that you check individually from the colleges.
