Last year, the cut-off for SIMSR's MMS course (via Gujarati quota) was around 97.1 percentile. So yes, there are very high chances of securing a seat with that score. Good luck!

The placements for operations depend upon the type of companies recruiting and the B-School from which it is doing so. The top B-Schools are known for their good placements for operations, and generally everyone gets placed with the packages offered being anywhere from Rs. 4 Lacs to Rs. 16 Lacs (or even more). Hope it helps!

You can opt for specialized Masters but before suggesting you any course I want to know from you about your interests and career plans and please answer two simple questions - what next after MBA and why do you feel the need for additional course after an MBA? These will be asked to you by the universities too. Do you have work experience?

With 75 percentile in CET, chances of getting a call from all the colleges mentioned are very likely. However, it would be difficult to convert for Welingkar, SIES, and Dalmia if your GD-PI doesn't go exceptionally well. You can apply to these colleges but ensure that you perform really well in the interview rounds. All the best!
