No, according to the SKDU NEST official website, the shortlisting of candidates to receive the scholarship for all courses, such as BA, will be done based on the entrance exam. Candidates need to appear for the SKDU NEST test so that they can apply for the scholarship, as application is compulsory for it. Quantum University/Quantum School of Law may take CUET UG scores for admission to the BA LLB course. Also, the admission eligibility for BA LLB courses is that candidates should pass Class 12 with a minimum aggregate of 50%, and CUET UG score acceptance is not specified on the official university website. However, Quantum University does provide scholarships based on CUET performance for entry into several undergraduate programmes, such as BA LLB.

As of now, the MGM Institute of Nursing, Aurangabad has not publicly disclosed specific cutoff ranks for the M.Sc. in Medical-Surgical Nursing program. Admission is typically based on merit, considering the candidate's performance in the B.Sc. Nursing degree and possibly an entrance examination or interview conducted by the institute. Given the competitive nature of postgraduate nursing programs, a strong academic record and relevant clinical experience are advantageous.

Yes, you can apply for the CUET PG exam even if you're in the final year of your bachelor's degree!
You just need to make sure that you complete your degree and have your final results by the time of admission (after the CUET PG results are declared).

Most universities allow provisional admission if you clear CUET but are awaiting your final marks.

Unless the Institute of Hotel Management (IHM) offers a particular pathway or conversion course, a sociology honours graduate with a BE (Bachelor of Engineering) degree is probably not directly eligible for an M.Sc. (Master of Science) programme in Hotel Management or any related field.  A bachelor's degree in a related field, like hospitality and hotel administration, is required for the majority of IHM M.Sc. programs.
