Absolutely yes, you can surely pursue a course in Economics after class 12th depending on the college you wish to get into.
Eligibility-
The minimum criterion of eligibility needed to be met for admission to the course is a 10+2 or equivalent qualification from a recognized institute/ university with a minimum aggregate score of 50 (mathematics being a must). Banaras Hindu University is a good university for BA course. Its entrance is BHU UET. Actually it is quite a simple exam to clear but sometimes students commit some mistakes. There are 150 questions in the entrance examination, which contains 100 for different types (basics from all the subjects) and 50 questions are optional English or Hindi.

You can study psychology after 12th with science, it totally depend on your interest. If you are interested to study psychology you can go for BA (Bachelor of Arts) and you can take psychology as a subject in BA.
You can take admission in humanities course and then in your post-graduation. You need not to give any special entrance exam and can take direct admission in any university offering the course. You can consider St. Stephen's, Lovely Professional University, Christ University, etc.

Delhi University is one of the most favorite colleges among students for higher studies. Delhi University takes admission through entrance exam for some courses at UG and PG level. Arts and humanities is the course in which students have to work hard to get a job with a good salary package. Arts graduates are not eligible for many companies who visit the campus for placement.
In order to get a good job this course requires Master's degree. The students can get jobs in government and private sectors after qualifying the competitive entrance exams like SSC CGL, UPSC, CDS and many more. So I think there are almost no colleges providing placements to arts and humanities students.
