You can try applying and you may get an offer from a college but visa chances are minimal. So first check the requirements. If the Diploma you are applying to accepts students holding Bachelor's degree then you can apply to it. Visa rejection rate in Canada is very high, its very selective so apply carefully.

MIT is one of the most selective universities, to apply for a UG program take the SAT or the ACT. Excellent SAT or ACT performance is a must, however, they will look at your profile holistically, therefore, you must not only excel in your academics but also in your extracurricular activities. It is not necessary if you are already qualified to be a scientist. You have to take SAT if you wish to pursue your Bachelor's degree in the USA. If you already have the required qualifications then apply for research-oriented jobs and projects.

If you meet the admission requirements, you can and particularly if you gain work experience during these 5 years. You must state the university why you took the gap and what was the nature of it. You must also contact them and check specific requirements since they differ with different universities.

At the outset, let me congratulate you on your decision to do hospitality programme from Singapore. If you want to migrate to the USA ultimately, then try and do your internship with a good brand in the USA. Once you finish your programme, join a good brand who has a great presence in the USA. Once you join them, work hard and avail the benefits of inter-property transfer to shift to the USA.
All the best!
