There are many courses available. Always remember, you should pursue a stream/course based on two things :
-your career goal
-the type of job you want to do
In regards to your question, whether there is any difference in Correspondence and Regular course, i would say it varies from one subject to the other also from one degree to the other. However in general a course through distance learning does not have as much value as the regular one so if you can do a regular course, it would hold a lot of importance and thus be a much better option. If you have done or going to do B.Tech(Mech) than you should be going with M.Tech as it will give you more opportunities than M.Sc. Also M.Tech is considered to be more job oriented than M.Sc. After M.Tech you can choose teaching profile, corporate profile or even research work. So in my opinion M.Tech will be a better option. Suggesting some universities -

You can look for courses recognized by UGC-DEC such as IGNOU, KSOU etc. A PG Diploma in Computer Application or any other related field will do. You may also opt for PG Diploma in Management. The MIS degree with a Management background will be helpful in future. Hope this helps.

All the three institutes mentioned by you are equally good and thus it will be very difficult to tell which one will be the best option. However, we can help you with the parameters that you can keep in mind while choosing an institute among the three.
You can consider the below parameters
1) Faculty,
2) Affiliation / Recognition
3) Course Material,
4) Quality Education,
5) Fees
6) Infrastructure
7) Success Rate.
8) Placement
9) Top recruiting companies.
Also, if possible go through the alumni speak section to get an idea what the alumni thinks about the institute.
