Civil services can be done with any stream. There are basically three stages of civil service exams-:
1) For preliminary –
a. First subject is general studies (GK+ current events + logistic aptitude + reasoning + all subjects studied till class 10th).
b. Second subject is optional (your favourite subject of any stream syllabus till class 10th level).
2) For Mains exam also: subjects are English or Hindi and two optional subjects.
So you can choose your subjects in 11th as per your liking and interest.

As per your query, you can consider these Bachelor's degree for UPSC preparation. And, you can choose one as per your stream whether its arts, science or commerce
The options are:
Physics/Chemistry/Maths (Hons.)
Economics (Hons.)
BA LLB
Sociology
Psychology
political.Science
History
B.Tech from any specialization
Philosophy
Geography (Hons.)

Normally, class 12 subject does not have much impact, but if you are serious from 11th for UPSC, then you can choose arts stream. Civil services mainly covers the subjects like history, geography and other humanities subjects.
