I don't know much about mechanical engineering from Vellore Institute of Technology but I can tell you what mechanical engineering is from Manipal Institute of Technology.
First of all, craze of mechanical engineering is increasing day by day. Secondly, it is very difficult to get a seat in good colleges for mechanical engineering. Mechanical branch of Manipal Institute of Technology is rated very high in India.
Mechanical branch of Manipal offers SRF - Student Research Forum for students to go deep into concept and discover the hidden concepts in their areas of Interest. This makes them become good engineers. Apart from this, there are many student run projects which are rated very high and are not available in many colleges in India. Projects like Formula Manipal - Racing car built by MIT students which won several prizes, Team Manipal Racing - an off road racing car, Solar Mobil - First 4 seater solar car in India launched this month only, and several others.
From placement point of view, companies like Mercedes, Tata, Toyota, etc. recruit students from MIT Manipal.

Vellore Institute of Technology University is located in Vellore and Manipal Institute of Technology, Manipal. For computer science branch, both of them are famous colleges which come under top 10 private engineering colleges in India.
However, I would like to suggest you that you should choose Vellore Institute of Technology (main campus) than Institute of Technology because of the following reasons:
1. The fee structure of Manipal Institute of Technology in Computer Science Engineering is about 12 LPA in total whereas fee structure of Vellore Institute of Technology is about 7.5 LPA in total.
2. Faculty of Vellore Institute of Technology is much more experienced and knowledgeable than the faculty of Manipal Institute of Technology as a number of faculties of Vellore Institute of Technology have Ph.D degrees.
3. Manipal Institute of Technology is better than Vellore Institute of Technology in one thing that is infrastructure.
4. Facilities provided by Vellore Institute of Technology is much better than Manipal Institute of Technology.
5. Now, let's talk about the placements:
Average package offered by companies in the Manipal Institute of Technology is about 5 LPA. Highest package offered is about 21 LPA.
Highest package offered is about 27 LPA.
