As per my knowledge and my opinion, to become a professor in Government University, you can go in any of the two options, you have mentioned, as if you go for B.Tech M.Tech and then Ph.D. You are eligible for professor in University of Technology, and if you go for B.Sc M.Sc and Ph.D, then you are eligible as the subject teacher of the respective subject in which you have completed the graduation post-graduation and Ph.D.

In my opinion Physics is the best stream as there are variety of courses in Physics and the research opportunities are vast. If you are willing to get job after M.Sc. Then Chemistry has better aspects in India. Companies like DUPont offer very good packages to M.Sc. Students - see here http://www.dupont.com/corporate-functions/careers/university-recruiting/graduate-careers.html
It would be better, if you apply for IIT JAM because the better college you get, the higher your package and learning gets.

The basic eligibility is that the candidate must have passed 10+2 from a recognized board. So, if you have to clear your 10+2 from a recognized board, you are eligible to apply for the exam.

Eligibility
Candidates should have passed B.Sc. With Reproduction, Zoology, Microbiology, Biochemistry, Biotechnology, Bioscience or Physiology as one of the subjects. Candidates should have passed with aminimumof 60% marks in aggregate. Candidates should have aminimumof 50% marks in aggregate.
