If you are a sous chef, I believe that you have already got skills and asking this question suggests that you are not confident about your skills.
Well, If you were a fresher without any skill I would have suggested that you can't do it but since you are already a chef with 7-years of experience, you can enhance your skills by watching videos online and practicing those recipes at home.
