Cut-off of 11th class after SSC exam varies from college to college as well as stream to stream! Generally, Science stream have high cut -off as compared to other Commerce and Arts stream!

In CUCET, you should know the whole details little bit of 11th and 12th class but the whole syllabus of PCB.

It is not possible (it's illegal) to go for class 12th without clearing class 11th. So, better clear your class 11th, and then think about class 12th and CS.

There is no specific need for a group of subjects. Anyone from any stream can apply for this course of B.A psychology. It does not matter if you had psychology in 12th class or not, you will still be eligible to apply nonetheless.
However, it is advised that you should include psychology in 'Best Four Subjects'(BFS) if you had it as a subject in 12th. If you do not do so, you will face 'Deduction' of some percentage(2-3%) in your BFS%.
DU says that you must include that subject in your BFS, the course of which you are applying for as a major. For example, if you are applying for History(H), you must include History in BFS else face dedu

Yes, you can. IGNOU and other open universities run bridge courses, so as to pursue Bachelor's degree. http://www.ignou.ac.in/ignou/aboutignou/school/soss/programmes/detail/145/2 click the link for more. There is no need at all for having class 11th and class 12th standard. Alternatively, pursue class 11th and class 12th standard via private mode or get admission in NIOS, then after pursue BA from distance or private mode.

Anil, you can opt any stream but it will be good for you if you opt computer Science as one of the subjects in 11th.
