Yes,
Essential Food Safety and Hygiene Practices are Compulsory for the Students of Hotel Management and every student must keep this In mind. However, Sikh students are exempted with some guidelines. Here I have provided undermentioned links of IHM Gurdaspur and Kashmir. Please go through these links to understand the dress codes. Dress codes of almost all IHMs are same with little differences:

Practically speaking, all the courses that you have mentioned are the same. It is just the change in nomenclature. AICTE approved colleges provide 4 years degree whereas all other institutes (including NCHMCT) offer 3 years degree. The content of the syllabus is more or less the same. Instead of the course or name of the course, you should look at the placement of the institute/college that you choose.

It seems difficult to get admission in this college as per last year's cut-off.
