Eligibility criteria:
Students who have cleared 12th standard examinations, from all streams, are eligible to apply for the hotel management course. Minimum marks criteria exists in case of many Institutes. It may vary between 45-50% marks, in 12th board examinations.

Yes, you can give NCHMCT JEE next year but for that you need to prepare well.

IHM Mumbai would be a hard shot for you. But here are a few other IHMs equally good:
IHM Bhopal
IHM Bhubaneswar
AIHM Chandigarh
IHM Chennai
IHM Gandhi Nagar
IHM Goa
IHM Hyderabad
IHM Jaipur

There are a few IHMs you can get. But admissions also depend on your reservation status.

No reservation exists in NCHMCT under the defense quota.

Your chances are extremely slim for the above mentioned IHMs. But there are other IHMs you could try out.

NCHMCT has not released any information regarding number of students who have appeared for the JEE. They might in the future.

Yes, you do have a chance in maybe a few central IHMs, most of the state IHMs and private IHMs.

IHM Mumbai is obviously the best choice. IHM Mumbai comes at second place only behind IHM Pusa.

Some of the institutes consider CAT scores while some of them do not. For MBA in T&T management you need to first list down the colleges you prefer to go and then ask them if they are considering the entrance exams courses or not. You may get some institutes which focus on your skills more than your entrance exam scores.
