AIIMS preparation needs more thoroughness. In AIIMS, you will get few questions from general studies also.
For NEET, be thorough with NCERT books. Solve as many as MCQs as you can.

Preparation of BAMS and MBBS can be done simultaneously as the basic structure of the questions are same.
But it does help to have a clearer target trying to achieve the goal becomes much easier.

If we think both courses at graduation level & you are hardworking & like field work then off course veterinary will achieve your goal. As per as veterinary course concerns, after completing the course you have many options like work in Dairy, Fishery, Goat, Horse, Poultry, Piggery, Rabbit, Wild life, etc. It means, veterinary is the only branch with one degree but will land you with 5-8 options to work. No other course will provide you such a flexibility. If you get the expertise in Horse Management, you will earn more than a MD Doctor.

Yes, it is possible. But you have to assign separate timings for the preparation of NEET daily. You have to study at-least 4 hours a day to prepare well for NEET. You will need to keep your NCERT syllabus on tips and can also refer to the study material provided by any coaching institute. Also, try to practice MCQ questions of each and every subject every Sunday.
