IHM Shimla offers four courses at UG, PG and Diploma levels. The institute offers BSc, MSc, Diploma in Food Production and Diploma in Food and Beverage Service. Candidates need to complete a minimum of Class 12 to apply for BSc and Diploma courses. Graduation is required to apply for PG programmes.

IHM Shimla has not specified the minimum marks to apply for admission to Diploma in Food Production. However, candidates must fulfil the eligibility requirements as mentioned below:
- Pass Class 12 with English as a compulsory subject
- For General/ OBC and Physically Challenged/ Handicapped Category age of applicant should not be more than 25 years. For SC and ST Category age of the applicant should not be more than 28 years.

IHM Shimla admissions are primarily entrance-based. The institute selects candidates for BSc based on NCHMCT JEE score. The National Council for Hotel Management & Catering Technology Joint Entrance Exam (NCHMCT JEE) is a national-level hospitality entrance exam for admission to BSc (Hospitality & Hotel Administration). Admission to the MSc course is through NCHMCT MSc JEE score. For other programmes, the merit of the candidates in the last qualifying exam is considered for selection.
