You have to apply first, and then BHU has its own entrance exam system. After clearing the examination, you have to face the interview round and after that, you can get admission in BHU.

No, there isn't any specific exam conducted by the colleges as they declare their own cut-offs. They might arrange interviews though.

I think BHU is more preferable because:
It is more reputed in India.
There is no political drama.
Faculty and Campus is awesome here.
Learning Environment.
Professors just teach and motivate you to learn (Well not all professors).

At Institute of Management Studies (Faculty of Management Studies) we have MBA and MBA (International Business) in which we get admissions through CAT. The courses you are talking about are part of Faculty of Commerce and not FMS. Admissions in these courses take place through entrance conducted by BHU. So, I will not be able to tell about placements of these courses but someone from faculty of commerce can surely help you.

The cut off rank and marks vary each year as it depends on the number of applicants and the difficulty of the question paper. Your AIR shall be below 4500 to get a seat for mechanical engineering in IIT BHU, Varanasi.
