I went through the same confusion when I was preparing for CUET.
From my experience, CUET previous year question paper and mock tests both played different roles, and neither alone was enough.
What PYQs actually helped me with
When I started solving CUET previous year question papers, I realized:

CUET UG and class 12th exam syllabus overlaps. However, CUET UG exam is considered more challenging as exam contains negative marking and limited time duration. While boards require specific percentage to pass the exam, on the other hand CUET UG is a percentile based ranking system for admission to top universities.
If candidate is prepared well for the Class 12th board examination, CUET UG preparation is half done.

The exam is conducted in May. It is conducted in many shifts. Students can fill the application form from January. The applications are open till in first week of February. However, dates may change as per the latest schedule.
