You can take CAT even after 12th grade but there is no point of doing so because the score of CAT is valid for just one year (unlike GMAT/GRE).
Since you can't do Post graduation (MBA) before completing Undergraduate studies, there is no point in taking CAT after 12th. But I agree that after 12th you will be my better at Math/Quantitative aptitude and better equipped to handle quant section in CAT.

Go for Science as there are many option you will get after completing your graduation for your career.
If you take humanities its easy but not good for successful career.
