Well, there is not any field which can guarantee you any fixed income. You need to work hard for that but for your knowledge, do B.Tech from any reputed college with CSE branch to be in safe side.

If you are now studying in Science, then you can continue on arts stream if your state education board permits. Otherwise, you have to go back and start from again 1st PUC as arts.

Best will depend from one person to another. You need to know your interests and aptitude. Know your strengths, which subjects you like to study, what kind of a career you want in future and decide. After PCM you can choose from
B.E./B.Tech
B.Sc IT
BCA
B.Sc in Physics, Chem or Maths
B.Arch
BBA
B.Com
Defence
Navy
BA LLB
and so on.

If you have decided to pursue English hons then why do you want to study commerce? Isn't it wise to study 10+2 Arts instead? Weigh your likes and dislikes and study accordingly.

You may look forward for ethical hacking courses, but in my opinion, do B.Tech CSE from any reputed institute and on another side, you can continue with your hacking. This blend will definitely provide you a great scope for future.
