Hello Anupam,
Your IELTS score is pretty less, as most of the Canadian Universities have an entry requirement of an overall IELTS score of 6.5 with no band less than 6. There are no issues with your percentage. I would suggest you to retake IELTS and try to score well. Chemical Engineering has a great scope in Canada.

Mechanical, electrical and computer science are evergreen branches. Electronics and communication is bit a hybrid as most IT companies favors ECE students more after CS/IT students. Civil is good for those interested in designing and planning of structures.
Electronics and instrumentation is favorable for those with interest in electronics and control systems of manufacturing plants or turbines. Robotics is a growing career option still untapped in India, it needs both ECE and EI. From past 15 years, CSE is being the first choice of students and still the trend is same. Yes, you can take GATE exam with mechanical. The GATE authority allows two paper combination for various papers in case any candidate wish to appear in more than one paper in the same year. The list of two paper combinations for GATE can be checked on the Shiksha page as well as the official website of GATE.

It depends on your JEE Mains score. You can also get admission in a good college by qualifying GUJCET. Score good marks in GUJCET to get admission in colleges like LD and MSU. You should score good marks in competitive exams to get a good merit.
