Hi Manish, for admission in most of the colleges offering BHM programme, you need to be class 12th pass with minimum 50%. Most of the colleges have their own aptitude test to qualify the students for admissions. National Council for Hotel Management has its own test, which is widely accepted as well. If you want to make career as a Chef or in Hotel Industry, you shall opt for a degree/ diploma programme in Hotel Management. Yes, you can do post graduate Diploma in the same field you had done under graduation.
Few colleges will give you graduate Diploma program also. You should know the stay back options in Canada. If you do one year program, you will be extended only 8 months visa. If you do two year program, then you can stay back for three years.

In order to pursue hotel management you need to be pass in all the subjects in 12th standard. You can fill the form for NCHMCT JEE and simultaneously clear your compartment before admissions.

The upper age limit for candidates is 22 years as on July 1.
